Preparation
I made this meal just for the two of us. It was the continuation of a snowier day. I made several trips to the grocery store as I somehow seemed to forget at least one key ingredient each time I went. Even though they were all somehow noted on my list...huh... And of course, a hungry chef is never good! I completely overlooking taking pictures of my final product. It was on the plate and in our mouths before I realized it...I paired it with an easy side dish: small colored potatoes, quartered and tossed lightly in olive oil, salt and pepper, and roasted for the hour alongside the chicken. Easy peasy. The recipe made enough for at least two separate meals and maybe one solo meal. Perfect! I was heading to L.A. for three days this week to visit a good friend. Hey Jo Jo - I thought this dish was very good too - so far, the first chicken dish has been a favorite (Ed actually asked me to make it again) and the Sausage Ragu (my #3 was good, very easy and the cheapest and fastest to make LOL) Safe travels!!! XOXO
